Vegetable Fried Rice 2

1 cup rice
2 cups hot water
1 - 2 cups chopped vegatables: red pepper, carrots, onion, peas
1 teaspoon salt
½ teaspoon Chinese 5 spice
½ teaspoon Cajun seasoning
1/8 teaspoon sesame oil (5-10 drops)
2 tablespoons soy sauce
(optional) 1 cup cooked chicken or pork, chopped
1 tablespoon olive oil
(optional) 2 eggs, stirred

Cook the rice: Mix rice, hot water,½ teaspoon salt in a small pot. Bring to a boil, reduce to low simmer for 18 minutes.

Meanwhile, chop the vegatables and stir fry them for a few minutes in the olive oil. Add the cooked rice and the rest of the ingredients. Stir, cook till most of the liquid is gone. Add the eggs, stir till cooked.

Pork Fried Rice

½ - 1 pound pork tenderloins or boneless pork chops (can substitute chinese sausage, or leave out for vegetables only)
2 tablespoon olive oil
3 cup vegatables, from the following:
chipped onions, mushrooms,
red pepper, brocalli, carrots,
frozen peas
½ teaspoon cajun spice
½ teaspoon chinese 5-spice powder
1 tablespoon soy sauce
3 eggs
1 cup rice, cooked

Trim fat from pork, dice and sauté. Set aside. Cook rice and set aside. Sauté vegetables until mostly done, a few minutes only. Add cooked rice, meat, spices. Stir on high heat till everything is hot, and there is very little liquid. Correct spices as needed. Add the eggs, stirring until mixed and the eggs are cooked, a few seconds only. Serve.

    

Curry Fried Rice

1 teaspoon olive oil
1 onion, chopped
1 red pepper, minced
1 carrot, minced
1 cup uncooked white rice
2 cups low sodium, low fat vegetable broth (or water)
1 tablespoon curry powder
1 tablespoon soy sauce
1 tablespoon rice vinegar
1 tablespoon rice wine
salt and pepper

Cook the rice in the broth for 18 minutes.

In a pan over medium-high heat, heat the oil. Add the onion and garlic and Sauté for 4 minutes. Add the red pepper and carrot and Sauté for 2 minutes.

Add the cooked rice, spices, vinegar, soy sauce, rice wine. Stir and heat.

Black Beans With Rice

1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
1 red pepper, minced
1 cup uncooked white rice
3-4 cups fat-free broth, vegetable or chicken
1 tablespoon ground cumin
½ teaspoon cayenne pepper
2 cans (15oz) black beans, drained and rinsed
salt and pepper

In a pan over medium-high heat, heat the oil. Add the onion and garlic and Sauté for 4 minutes. Add the red pepper and Sauté for 2 minutes.

Add the rice and 3 cups of the broth, bring to a boil, cover and lower the heat and cook for 20 minutes. Stir frequently, add more broth is needed. Add the spices and black beans. Bring back to a boil momentarily.
