Omlette
4-5 eggs
½ cup chopped red pepper (or carrots, onions, etc)
¼ cup milk (optional)
½ cup fresh herbs (basil, oregano, chives, parsley, tyme)
1 tablespoon olive oil
1 tablespoon grated cheese (optional)
½ cup cooked pork or beef or chicken (optional)
3-4 pieces of cheese, ¼ inch thick.
salt and pepper to taste
Salsa as a garnish
in a omlette pan, Sauté the vegatables in the olive oil for a few
minutes. Meanwhile, mix the eggs, the milk, cheese, and herbs. Add
some pepper, and salt (only add salt if not adding cheese). If you
are going to add (cooked) meat, add it just before the eggs are poured in.
Pour the egg mixture in the pan. Meanwhile heat up the broiler.
Let the eggs cook till all but the top is done. Add the optional pieces
of cheese to the top. Put pan close under the
broiler for a brief while (less than a minute) to cook the top of the omlette.
Serve.
