Pork Roast, Slow-Cooked

1½ pounds roast, boneless, trimmed of all surface fat

Marinade:
2 tablespoons soy sauce
1 tablespoons honey or maple syrup
½ teaspoon dry mustard
½ teaspoon ground ginger
¼ teaspoon cayenne pepper
1 teaspoon cumin powder

Here's a recipe for enough marinade for 16 roasts. It will keep at room temperature
2 cups soy sauce
1 cup honey or maple syrup
3 tablespoons dry mustard
3 tablespoons ground ginger
1 tablespoon cayenne pepper
6 tablespoons cumin powder

Preheat the oven to 275-300º. Mix all the marinade ingredients together. Place the pork in a roasting pan and pour the marinade over it. Roast for 2 hours, turning every 45 minutes, adding a bit of water if needed. When the meat reaches 140º, add enough water to make ½ cup of juice. Remove when temperature reaches 145º (rare) or 150º medium or 160º well done.
