Pineapple TeaMote: Best made from leftovers from Pineapple Salsa1 Pineapple, skin and core 1 teaspoon cinnamon 1 teaspon maple syrup IMPORTANT: Before you go any further, you should wash your pineapple skin thoroughly. Scrub with a vegetable brush, or soak in vinegar for a half hour to remove any bacteria from the skin. Chop rind pieces and core into inch size pieces. Put into pot and cover with water. Add cinnamin and maple syrup or honey. Bring to a boil and simmer for two hours. Strain result and drink warm or cold. Makes about 2 quarts, add water as needed. Or, use a whole pineapple, chop into pieces and proceed as above,
doubling the cinnamon and maple syrup.
Makes about 1 gallon.
